Locally sourced, fresh and authentic
We source our ingredients locally and work closely with suppliers in the surrounding area. The result is seasonal menus, fresh flavors and a smaller carbon footprint.
We make full use of our ingredients
Food waste is minimal. The menus are designed to make optimal use of the ingredients, and the kitchen works creatively to use as much as possible of what we buy.

The administration is largely paperless, which means less waste and a more efficient, digital workflow.
